After years of degradation of oyster reefs, restaurants and municipal waste services are guaranteeing that consumed oysters will have their shells returned to the reefs, to ensure they rebuild and thrive.

The Hong Kong oyster filters more water of impurities than any other species. If cared for, the oysters that make up the reef can clean 200 liters per day.
