In a statement, ASAE detailed that 86 economic operators were inspected, as part of a nationwide operation aimed at the bakery and pastry industries, carried out this month.
The objective of the operation was to verify compliance with the legal requirements set out for the sector, "with special emphasis on monitoring the conformity of raw materials, labelling, product traceability, storage and packaging conditions, hygiene conditions and vehicle temperatures transport of bread, pastry products and products related to fine bread/bakery".
In addition to the five suspensions of activity for "non-compliance with general and specific hygiene requirements", 40 infringement cases were also opened.
In those cases, the main infractions are also related to non-compliance with hygiene rules, as well as the requirements of kitchens, pantries and manufacturing areas of food and beverage establishments, the lack of process or processes based on the principles of HACCP (Hazard Analysis and Critical Control Point), among others.
